Quality Attributes of Chitosan-Coated Cornelian Cherry (Cornus mas L.) Fruits under Different Storage Temperatures

Temperature is the dominant environmental stimulus that influences postharvest quality, visual appearance, and nutritional content of fruits. hastens fruit ripening senescence by impact on respiration rate acceleration metabolic reactions. This study was conducted to select optimized temperature for preserving quality-related traits antioxidant potential cornelian cherry fruits after harvest. The were treated with 1% chitosan then kept under 0, 5, 10, 21 °C days. results revealed lower than room (21 °C) better retained capacity had higher levels phenolics, flavonoids, anthocyanins even enzyme activity, hence attaining prolonged life.
